Guest Post

I have been busy, busy but hopefully by the end of the week I will have some updates for you on the To Do List. Today I have a guest post....Nikki, my younger sister.

What's up everyone? I am Nikki, Amanda's little sis, and I will be guest posting about.... drum roll.....FOOD!!! Mmm. So yes, you guessed it, I like to cook and then take pictures of my *sometimes* beautiful creations, but those pictures then sit on my computer and do nothing. So recently Britt and Amanda have asked me to do some guest posts so they don’t go to waste.
So without further a-do, I present....

Chicken Adobo

2 lbs           chicken drum sticks
1/2 cup       Soy sauce
1/2 cup       apple cider vinegar
2 tbsp         vegetable oil 
2 tbsp         Honey
2                bay leaves
2               Cloves garlic, minced
1 tbsp        crushed black pepper

Arrange the chicken pieces in a large pot in one layer. 
Combine the soy sauce, vinegar, honey, oil, garlic, bay leaves, and pepper in a bowl and whisk until the honey is dissolved. Pour the marinade over the chicken. Cover and refrigerate for a few hours or over night.

When ready. add water (about 1/2 cup) just up to the top of the chicken, cover the pot with a lid and bring it up to a high boil. When it reaches a boil, reduce the heat to medium/low and let simmer for 30 minutes.
Preheat your broiler on high. Remove the chicken from the pot and place it on a sheet pan with wire cooling racks placed on top. Place the chicken under the broiler until it is brown and crispy on top (5-10 minutes), depending on your broiler.
While the chicken is broiling, turn pot with the soy/vinegar liquid up to high and bring up to a rapid boil. Allow the liquid to boil heavily until it is reduced in volume by approximately one half. keep your eye on it though because once it starts to thicken it will burn pretty quick
spoon the reduced soy/vinegar liquid onto the browned chicken, serve with rice and top with chopped green onions if you desire.

Happy Thoughts

Happy Friday to everyone!! My Friday, not so good.....

 I have a small rant about the condo corporation again. I called them yesterday to see about the approvals for the interior and I was told they want someone else to come in and get ANOTHER quote because the first one was too much money....What does that mean?? More waiting. Also I asked what they are going to do about my parquet flooring and they told me they are going to get a  carpet company to come in and put carpet over my hardwood floors, that I just refinished 3 years ago!!!! Are you F**%$!! kidding me!!! I don't think so. They told me it's too much money to fix the hardwood so this is a better option. HA!

That's my little rant I am trying to stay calm and I am going to deal with this, there will probably be more updates to come. But for now HAPPY THOUGHTS!!

Update on Leaky Roof

I have a quick little update for you on the leaky roof situation (you can check out the first post and pictures here) . After lots of hurassing phone calls to the property management, my roof has finally been replaced. Not of course before we had a flood of water pouring in from some of the big rain falls we had last week. But, on Friday last week they managed to get the roofing company over to our place and fix the problem.

One down, one to go. We are still waiting for approvals on the interior hopefully with a bunch more hurassing phone calls and a pleasant letter, that too will be approved and on its way to being fixed.

Here are some current pictures of the damage that occurred last week after the heavy rain.

Do you see those little holes in the wall? Yup, that is from fingers. The wall is garbage, it is so soft.

O yes, and this picture below is in the living room just below Jax's room. Yup, you guessed it, it soaked right through the floor and down into the ceiling. Thank goodness we caught it and placed buckets under it or our hardwood floor in the living room would have been ruined also.

Thanks to everyone for all the advice after the first post I did on this situation, it help me a lot. I have a long list of dates, times, pictures, and videos of everything that has happened. I have also contacted some of the people suggested to see if they could help. Hopefully this mess will be cleaned up soon and we will be out of there.

I finally got the picture of our tattoos from Britt so finally the reveal of what we got.....

The roman numeral three on our left wrist to represent the three of us. I had a picture of the one I got representing Jax but I can't seem to find it so I will post it later, sorry.

In & Out, Up & Down

It has been a crazy week! I have been pretty busy now that I am working, I feel like I have no time to do anything. I actually miss being in school, crazy I know! Mostly because I was doing stuff I love and I'm not really doing any of that now.

I have a few updates to the house to show you later this week and my sisters and I went to get our tattoos which I will show you, I'm just waiting to get the picture from Britt.
